We’re A Match Made in Heaven The big sister to our Bonita Applebum Apple Pie Brown, Muy Bonita is a bigger, badder ‘bum. This double brown ale flaunts a bodacious body and a stunning combination of real cinnamon, vanilla, and apples. So thick, she’s like a hip hop song.
Our luscious and silky smooth OP Porter infused with whole vanilla beans. A complex blend of dark malts and real milk sugar creates the bold flavors of dark roast coffee mingling with farm fresh cream. For the stout and porter lover in each of us, OP is a knockout.
Our Stern Line Stout boasts a dense and creamy texture, smooth body and a slightly dry finish. The oatmeal enhances the beer and makes it fuller than a traditional stout and less formidable than an Imperial Stout. Stern Line Stout offers up a more complex flavor than most ordinary oatmeal stouts. With a pleasing blend of darkroasted coffee, semi-sweet chocolate and lightly toasted oatmeal flakes, the flavors are unfathomably deep.

Our Ace Pineapple is another first [thirst] for the California Cider Company. We believe it to be the original pineapple cider made anywhere in the world! We add pineapple juices to our fermented apple base to produce a 5% ABV cider that has a great pineapple nose and a semi-sweet initial taste with a tart finish. It is extremely refreshing and very quaffable for cider, beer, or wine drinkers. It is delicious when consumed ice cold. We got the idea for the cider on one of our many visits to the beautiful and inspiring Hawaiian Islands. It’s the ideal tropical drink especially in hot and humid climates.

Zombie Killer Cherry Cyser is made with Michigan tart cherry juice, apple cider and star thistle honey. It is sweet but balances nicely with the tart cherries. Be careful...it is extremely addicting and refreshing. Serve cold...Zombies hate the cold!

First Quadrupel in the world. 25 years ago, The Koningshoeven brewery baptized her beloved Quadrupel under the approving glance of the monks. A closely guarded recipe became reality, and the first Quadrupel beer in the world was born. Colour: Warm amber-coloured with a crème-coloured head. Aroma: Hints of cloves and nuts, balanced by the sweet aromas of vanilla, raisins and banana. Taste: La Trappe Quadrupel is the heaviest ale of La Trappe Trappist ales and is eponymous of this ale style. A full, warming and intensive taste. Malty with the sweet tones of date and caramel. Aftertaste: Smooth and light bitter aftertaste.
Our take on the Trippel style originally brewed by monks in Belgium features fruity / funky notes from the traditional Belgian yeast paired with a sacrilegious American hop character.
"The end of the world" La Fin du Monde was developed through 18 months of research on a unique strain of yeast originating from Europe. It is brewed in honor of the intrepid European explorers who believed they had reached the “end of the world” when they discovered North America ‘the new world’. This triple-style golden ale recreates the style of beer originally developed in the Middle Ages by trappist monks for special occasions and as such it was the first of its kind to be brewed in North America.
Aged? Many beers have a long maturation, but this one has only 24-36 months in oak barrels. Pale? This beer has an old gold to bronze color, rather than the burgundy more common in the breweries of West Flanders. This is the ‘mother beer,’ used in various quantities to blend with the other Petrus beers, and to give them their unique and very distinctive taste. This mother beer is rather sour with a bite like the best Brut Champagnes. A connoisseur’s delight! The only one of its kind on the U.S. market.
Alexander is a blend: 2/3 is two-year foeder matured beer, and 1/3 young ale, with macerated sour cherries. The last time this sour was available in the states was in 2000.
"We spit hot fire" Pull the pin, count to four, and get ready to feel an explosion of sweet raspberry and spicy habanero flavor. No need to worry about collateral damage or capsaicin shrapnel since this red ale has just enough malt to strike a perfect balance between fruity, sweet, and spicy. The Soothsayer sees in the shadows a glass of black vision, indeed. A dark future that’s all in the making. Tempting good folks to share in the deed. What he sees is the old way of brewing with no spices, no voodoo, no spells. Just the grains and the yeast and the ancient black art. Can’t you feel how it darkly compels? With Soothsayer, we forgo any spicing to explore the art of dark brewing. Simple grains and Ommegang yeast alone portend notes of licorice, coffee and chocolate under a thick tan head.
This oak-aged hybrid has been gaining popularity over the past few years and is now available year-round. For Burton Baton, we brew two "threads," or batches, of beer: an English-style old ale and an imperial IPA. After fermenting the beers separately in our stainless tanks, they're transferred and blended together in one of our large oak tanks. Burton Baton sits on the wood for about a month. When enjoying the Burton Baton, you'll find an awesome blend of the citrus notes from Northwestern hops melding with woody, vanilla notes from the oak. The wood also tends to mellow the 10% ABV of Burton, so tread cautiously!
Our classic Raison D’Etre aged with Syrah grape must & brett. In the analog age of music, artists recorded take after take, experimenting with new sounds until a great record emerged. Our Alternate Takes series offers a peek into our iterative and creative R&D process, where each batch is celebrated as its own off-centered hit. Alternate Takes #2 began with Raison D’Etre being end-fermented in a tank with a Belgian Abbey yeast. Then we transferred it to single-use red wine barrels, where we added Syrah grape must and brettanomyces. The result is a wild sour ale with a deep, dark and complex flavor.
SeaQuench Ale is our session sour quencher made with lime peel, black lime and sea salt. It’s a citrusy-tart union of three German styles of beer blissfully brewed into one. We begin by brewing a straightforward Kolsch with lots of wheat and Munich Malt, then we brew a salty Gose with black limes, coriander and our sea salt. We follow it all up with a citrusy-tart Berlinerweiss made with lime juice and lime peel. All three beers are then blended together in the fermentation tank to create this German hybrid.
Meaning Bad Weather in French, Big Storm’s Mauvais was inspired by the ale farmworkers drank throughout the French speaking region of Belgium. The low malt aroma balances the fruity-ester aromas and the medium hop bitterness. The complexity of this dry, pale beer contributes to the signature character of a Belgian Saison. Keep and serve cold as hail.
In 2008, the Sorachi Ace hop was quietly revived by a family farm in Washington State. Less than a year later, we made it the star of its own titular beer. Originally a member of our limited Brewmaster’s Reserve series, Brooklyn Sorachi Ace is a beer we just couldn’t let disappear. Brooklyn Sorachi Ace is a classic saison, an unfiltered golden farmhouse ale, with a clean malt flavor and the quirky Sorachi Ace hop standing front and center. Dry-hopping releases Sorachi Ace’s bright, spicy aromatics to tickle the nose before ascending into a fine harmony between pilsner malt and playful Belgian ale yeast.
Kentucky Bourbon Barrel Ale. With a little creative curiosity, we used spent bourbon casks, fresh from decanting, and filled them with our very own Kentucky Ale. From barrels that once held the finest bourbons of Kentucky, we present Kentucky Bourbon Barrel Ale, a smooth, golden elixir unlike any other. Subtle yet familiar flavors of vanilla and oak are imparted to this special ale as it rests in the charred barrel. We attribute this to what the bourbon maker calls the “angel’s share”. Elegantly smooth and modestly carbonated, Kentucky Bourbon Barrel Ale is a fine sipping ale with the distinctive nose of a well-crafted Kentucky bourbon.
Kasteel Rouge is a unique blend of Kasteel Donker and a sweet cherry liqueur. This fruity beer makes a great aperitif on a sunny terrace. It’s certainly a beer for lovers of sweet cherries with an overpowering aroma of the fruit. The cherries get the better of the malt in the Kasteel Donker mother beer, although it contributes touches of chocolate and pepper to remind you it’s there. It is surprisingly easily digestible for quite a strong beer.
The History of Framboise Long before hops were common in most beers, various fruits and vegetables were used to season beers. The acidity of Lambic beers blends perfectly with raspberries - Lindemans Framboise is the fruit lambic category leader. Taste Magnificent aroma, delicate palate of raspberries with undertones of fruity acidity; elegant, sparkling clean taste, with inviting raspberry supported by lambic complexity. Deep reddish-purple color with pink head.
Pub Exclusive: Research and Development Series This special release has yet to be released anywhere in the country and has only sampled at the brewery. This is one of the first kegs to leave the brewery and the only one in Florida so far. Materials: 50% malted barley, 40% wheat, 10% oats, Saaz hops, coriander, and Pink Himalayan Sea Salt. What is a Gose? Gose is a top-fermented beer that originated in Goslar, Germany. It is brewed with at least 50% of the grain bill being malted wheat. Dominant flavors in gose include a lemon tartness, an herbal characteristic, and a strong saltiness (the result of either local water sources or added salt). Gose beers typically do not have prominent hop bitterness, flavors, or aroma.

Very simply, Helicity is wind and water moving together in a circular, rotating motion. SUNTAN FOR YOUR SOUL Our unfiltered and refreshing German-style wheat beer is full on flavor yet light on the palate. Authentic hefeweizen yeast creates the compelling aromas of bananas, citrus, and cloves, while the all wheat and malt body perfectly captures the brilliance of a golden Florida sunset.
American Wheat Ale An easy drinking attitude and a touch of citrus peel make this wheat ale our beer of choice when it’s hot and humid out. Formulated for maximum protection from the Florida heat.
Low in alcohol and refreshingly tart, Berliner Weisse is a traditional wheat sour from Berlin. The tartness compliments the light and effervescent wheat beer for a refreshing experience.
Our Berliner Weisse is a light-bodied, super tart, refreshing wheat ale. We kettle-soured this beer with lactobacillus (a "friendly" strain of bacteria that is also commonly used as a probiotic). The grain bill consists of equal parts pearl malt, wheat and spelt. The hop bill consists of a modest measure of Mandarina Bavaria hops. Inspired by a centuries old German tradition, we prepared flavored syrups to balance out the tartness and provide an extra layer of flavor and complexity. However, instead of using the traditional woodruff-flavored and raspberry syrups preferred in Germany, our syrup is made in-house from locally sourced ingredients... -Ruby Red Grapefruit: Made with Ruby Red grapefruit juice and zest (sourced from Schacht Groves) and sugar.
An Ultra-Mega-Mondo Red Ale. An ultra-mega-mondo red ale first made for our anniversary in 2006 to celebrate thirteen years of brewing ultra-mega-mondo ales. From the first day of the first mash of the first recipe in the first brewhouse in the first space to these coordinates on the cone of space-time; We have worked hard to walk in the footsteps of our hero brewers- Chico’s brewer of California’s Best Pale Ale, the Noble Brewer of the planet’s only legal Steam Beer, and Oregon’s Rebel Brewer from Newport. Now we have found our own voice as brewers but our admiration for the Great Ones has not dimmed one bit. If we walked well down the hero’s path, perhaps we too have been an inspiration for others. Beer is a Bronze Age business and we feel honored to leave our footprints on it’s path into history- at the same time leaving our flavors on your buds. Obey those Buds! Our Rod Bender Red is an American style amber ale which is characterized by medium to high malt character and medium to low caramel flavor. American amber ales have a medium bitterness derived from American grown hops. They are usually darker in color which comes from the addition of darker caramel malts and typically have more body than pale ales.
You're not worthy This is an aggressive beer. You probably won’t like it. It is quite doubtful that you have the taste or sophistication to be able to appreciate an ale of this quality and depth. We would suggest that you stick to safer and more familiar territory—may something with a multimillion-dollar ad campaign aimed at convincing you it’s made in a little brewery, or one that implies that their tasteless fizzy yellow beer will give you more sex appeal. Perhaps you think multimillion-dollar ad campaigns make a beer taste better. Perhaps you’re mouthing your words as you read this.
Stone 20th Anniversary Citracado IPA A milestone double IPA brewed with citra hops & avocado flower honey. Aroma - Orange, citrus and floral dominate upfront with some dankness and a hint of honey in the background. Taste - Lots of orange, citrus flavors from the hops, which blend nicely with the floral honey and malt backbone. As it warms, the honey becomes more prevalent. Palate - Incredibly smooth for 9% ABV. A hint of sweetness from an otherwise dry and crisp beer unfolds into a bitter finish that makes this beer very complex.
Side Project: Volume 27 Mango Habanero Double IPA Surf’s up with our “HI-10” Mango Habanero Double IPA. With citra waves for days, and just enough heat to make you sweat, our big and juicy DIPA has plenty of kick to keep you barreled from start to finish.

This dangerously delicious recipe features often subtle, but sometimes assertive signatures of American hop varieties. The Calling is the result of several months of hard (delicious) work by our brewing team who sought to create an IPA with a juicy, tropical fruit aroma that leaps from the glass. A simple malt base composed solely of our two row base malt serves as a platform for giant, punchy hop flavor and aroma provided by a blend of Simcoe, Bravo, Topaz, Cascade, Mosaic, Equinox, Galaxy, and Amarillo hops. Read that sentence again. We are not messing around here, folks. The Calling also receives an addition of lemon peel during the last five minutes of the boil to add an extra citrusy punch. At 8.5 ABV and 75 IBU, The Calling is the IPA we knew we had to brew.

We scraped all the hash out of the Yakima hop pelletizers we could get our sticky fingers on to concoct the dankest double IPA out there. There are no substitutes for this very special American Ale. Interesting Fact: The unforgettable flavor of this beer is the result of 100′s of test brews to refine the recipe and method. Head brewer and brewery owner, Mike Halker, brewed this beer for his wife Jodi who, for 2 years, kept saying “almost” until he worked his magic and made it the beer it is today.
This truly old fashioned soda has the rich, creamy flavor that only comes from using pure Wisconsin honey direct from the combs. Our extracts are prepared at the brewery in a hand-made, gas-fired brew kettle, by combining honey, pure vanilla and a host of aromatic botanicals.
