    This oak-aged hybrid has been gaining popularity over the past few years and is now available year-round. For Burton Baton, we brew two "threads," or batches, of beer: an English-style old ale and an imperial IPA. After fermenting the beers separately in our stainless tanks, they're transferred and blended together in one of our large oak tanks. Burton Baton sits on the wood for about a month. When enjoying the Burton Baton, you'll find an awesome blend of the citrus notes from Northwestern hops melding with woody, vanilla notes from the oak. The wood also tends to mellow the 10% ABV of Burton, so tread cautiously!

Alternate Takes #2 began with Raison D’Etre being end-fermented in a tank with a Belgian Abbey yeast. Then we transferred it to single-use red wine barrels, where we added Syrah grape must and brettanomyces. The result is a wild sour ale with a deep, dark and complex flavor.

    SeaQuench Ale is our session sour quencher made with lime peel, black lime and sea salt. It’s a citrusy-tart union of three German styles of beer blissfully brewed into one. We begin by brewing a straightforward Kolsch with lots of wheat and Munich Malt, then we brew a salty Gose with black limes, coriander and our sea salt.     Pub Exclusive: Research and Development Series This special release has yet to be released anywhere in the country and has only sampled at the brewery. This is one of the first kegs to leave the brewery and the only one in Florida so far. Materials: 50% malted barley, 40% wheat, 10% oats, Saaz hops, coriander, and Pink Himalayan Sea Salt. What is a Gose? Gose is a top-fermented beer that originated in Goslar, Germany. It is brewed with at least 50% of the grain bill being malted wheat. Dominant flavors in gose include a lemon tartness, an herbal characteristic, and a strong saltiness (the result of either local water sources or added salt). Gose beers typically do not have prominent hop bitterness, flavors, or aroma.

    Tap 40 - Orchid Island Beachside Berliner Weisse

    Our Berliner Weisse is a light-bodied, super tart, refreshing wheat ale. We kettle-soured this beer with lactobacillus (a "friendly" strain of bacteria that is also commonly used as a probiotic). The grain bill consists of equal parts pearl malt, wheat and spelt. The hop bill consists of a modest measure of Mandarina Bavaria hops. Inspired by a centuries old German tradition, we prepared flavored syrups to balance out the tartness and provide an extra layer of flavor and complexity. However, instead of using the traditional woodruff-flavored and raspberry syrups preferred in Germany, our syrup is made in-house from locally sourced ingredients... -Ruby Red Grapefruit: Made with Ruby Red grapefruit juice and zest (sourced from Schacht Groves) and sugar.
